A moat is not the best place for a Water Nymph to live. Moats are dirty, they don't have much current through them, and in the event of a siege, the Nymph would inevitably be a casualty. But if the Nymph is willing to put up with all that, the perk is that they have ready access to hundreds, if not thousands of soldiers who have nothing better to do than try to win thier favor!

Hehe, so she doesn't like raw fish but has a fancy for something a little more prepared. Makes sense.
It may not be the best place, but I'm sure she has ways of dealing with the unpleasantness. If she's smart, she'll try to get the humans to make changes to the moat to suit her needs - and I'm sure she can put the charm on to get them. Might not be a bad arrangement to have in times of conflict.
